DEEPFROZEN PRODUCTS

The freshly bought fish is conserved immediately after arrival on our location in cold water and ice at a temperature by 0°C. Directly after rinsing with cold water, the fresh fish is frozen at -40°C.
All products of Bertus-Dekker Seafood are Individual Quick Frozen (I.Q.F.) and have a protecting glazing layer. In the freezing belt the whole fishes and fillets are frozen in a short time to an overall temperature of about -20°C. After the ice layer is formed, the products are refrozen and finally stored at -18°C in our cold store. Our products are sold under the well-known label of BERTUS-DEKKER in 5 en 10 kg carton boxes, safe in a plastic inner bag. On request we can also produce in non-labelled packages.
As a primary package we can offer our smaller deep frozen products like plaice-fillets in bags of 1000 up to 2500 gram.

Sole
Solea Solea
An all-year product, with larger sole caught mainly in spring and the smaller fish in autumn. Autumn is the prime time for sole. This is when they're are plumpest and free of roe. Alongside whole sole, we also supply fillets - mainly from the larger fish. These are sold fresh and I.Q.F. frozen. Purchasing skills are crucial in determining the quality of the finished sole product. Bertus-Dekker has a network of its own buyers stationed at 13 Dutch and Belgian fishing ports. Their years of experience pay off. They know the best when they see it. To preserve this quality, the fresh, prime sole are packed under ice especially made by us on the premises. This ensures a constant temperature of 0°C whereby the fish carries its fresh flavour right through to the consumer. Bertus-Dekker also lavishes detailed care on its deep-frozen sole. Here again, the end-product looks and tastes sea-fresh. Bertus-Dekker applies a glazing layer exclusively to prevent drying out. We guarantee that orders are delivered with the specified percentage of glazing.

An all-season catch, with larger fish in May and June and smaller in October and November. Most turbot from Bertus-Dekker is sold whole. Colour and quality vary depending on where the fishes are caught.
Brill
Rhombus Laevis
Brill is caught in the same seasons and areas as Turbot. At first sight the two fishes may look alike, but Brill has a much smoother skin.

North Sea cod are caught all year round. The Iargest volume and best quality are landed in winter. Whole cod are usually supplied fresh but we also offer fresh or frozen fillets.

Another all year fish. Winter is the season for larger fish, with smaller plaice predominating in summer. As with the sole, Bertus-Dekker's buyers select the best of the landings at the fish auctions. Then follows a second quality check while the plaice are stored in tanks of water at O °C. This is vital in preserving freshness and ensuring the quality of the end-product. Next, the well-washed plaice go to our highly skilled labour. We trained them ourselves and they boast years of experience. All the same, Bertus-Dekker's quality controllers check the results. Only when they're sure that no skin or bones remain, will they pass the plaice fillets for further processing. Most fresh fillets and whole fish are sold on Mondays and Fridays. To ensure a prime product we cut the fillets at the very last minute. After a further rinse, the fillets are packed under ice, in one kilo packs, for delivery to the customer. Bertus Dekker's careful processing and packaging keeps the product fresh. These fillets are also used in our frozen products. The principle here is that an optimal end-result demands excellent ingredients. As the fillets are positioned on the belt freezer, we conduct yet another quality check. Bertus-Dekker's excellent coated and breaded, pan-ready products show the same care and quality standards as our other lines. We've also developed a variety of breaded and batter coatings to meet the tastes of individual markets.
